Method
- Heat olive oil in a large pot and brown the beef on all sides, about 5 minutes.
- Add onion, carrots, and garlic, sauté for 3-4 minutes until softened.
- Stir in the beef broth, barley, and thyme. Bring to a boil.
- Reduce heat, cover, and simmer for 45-50 minutes until the beef is tender and the barley is cooked.
- Season with salt and pepper before serving.
