Ingredients
  

  • 454 gm Beef, ground, extra lean
  • 4 cup Beef broth (stock)
  • 1/2 cup Pearl barley, dry
  • 2 large Carrots (diced)
  • 2 clove(s) Garlic (minced)
  • 1/2 cup White onion (diced)
  • 1 tbsp Olive Oil, Extra Virgin Extra Virgin
  • 1 tsp Thyme, dried
  • 1 tsp Kosher salt (to taste)
  • 1 dash Black pepper (to taste)

Method
 

  1. Heat olive oil in a large pot and brown the beef on all sides, about 5 minutes.
  2. Add onion, carrots, and garlic, sauté for 3-4 minutes until softened.
  3. Stir in the beef broth, barley, and thyme. Bring to a boil.
  4. Reduce heat, cover, and simmer for 45-50 minutes until the beef is tender and the barley is cooked.
  5. Season with salt and pepper before serving.
