  • 1 Cup(s) Canned Beets (no salt added)
  • 2 cup Lettuce, spring mix (mesclun)
  • 1/2 medium Green Apple (diced)
  • 28 gm Walnuts (about 4 walnuts toasted)
  • 28 gm Goat feta cheese
  • 1 tbsp Balsamic Vinaigrette

Method
 

  1. (optional) Toast walnuts in a toaster oven, oven, or air fryer until crisp.
  2. Dice the green apple, and cut the beets into smaller pieces if necessary.
  3. Add all the ingredients into a bowl and dress with balsamic vinaigrette.
