Ingredients
  

  • 4 breast Chicken breast, boneless, skinless
  • 6 cup Chicken broth (stock)
  • 2 large Carrots (peeled and sliced)
  • 2 large stalk(s) Celery (thinly sliced)
  • 2 clove(s) Garlic (minced)
  • 1 large Zucchini (diced)
  • 2 cup Baby spinach

Method
 

  1. In a large pot, heat the chicken broth over medium heat.
  2. Add the chicken breasts, carrots, celery, and garlic. Simmer for 15-20 minutes until the chicken is cooked through.
  3. Remove the chicken, shred it with two forks, and return it to the pot.
  4. Add the zucchini and spinach, cooking for an additional 5 minutes until the vegetables are tender.
  5. Season with salt and pepper to taste, then serve hot.
