Method
- In a large pot, heat the chicken broth over medium heat.
- Add the chicken breasts, carrots, celery, and garlic. Simmer for 15-20 minutes until the chicken is cooked through.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Add the zucchini and spinach, cooking for an additional 5 minutes until the vegetables are tender.
