Ingredients
  

  • 1 medium Cucumber, peeled (chopped)
  • 1 cup Tomato (chopped)
  • 2 tbsp Balsamic vinegar
  • 2 tbsp Extra virgin olive oil Extra virgin
  • 1/2 cup Red onion (sliced thinly)
  • 86 gm Chicken breast, skinless
  • 1 spray (about 1/3 second) Olive oil cooking spray

Method
 

  1. Spray olive oil spray in pan
  2. Cook the chicken breast on medium heat for 3 minutes on each side, or until the until temperature reaches 165 degrees Farenheit
  3. Mix the cucumbers, onions, and tomatoes with balsamic vinegar and olive oil.
  4. Cut the chicken breast into 1/2" strips and add to the greens
