Ingredients
  

  • 908 gm Chicken breast, boneless, skinless
  • 1 can(s) (15oz) Pinto beans, canned
  • 1 can (15oz) Black beans, canned
  • 1 can (28 oz) Fire Roasted Diced Tomatoes
  • 454 gm Corn (canned or frozen and thawed)
  • 341 gm Salsa, ready-to-serve (jar of your favorite salsa ((no sugar added)))

Method
 

  1. Place the chicken breasts on the bottom of your slow cooker.
  2. Pour the tomatoes and salsa over them.
  3. Layer on the beans.
  4. And finally, the corn.
  5. Cover securely with lid.
  6. Set to low temp. Cook on low for 5-7 hours, or until the chicken easily falls apart when the pot is stirred.
  7. When done, shred the chicken simply by stirring everything. If that doesn't do an effective job for you, use forks.
