Ingredients
  

  • 1/4 cup Quinoa, uncooked ((50 grams cooked))
  • 50 gm Black beans, canned
  • 50 gm Sweet corn, canned, drained
  • 100 gm Fire Roasted Diced Tomatoes
  • 30 gm Avocado
  • 86 gm Beef, flank steak, boneless, lean and fat, 0mm (0") trim
  • 1 sprig Cilantro (coriander)
  • 1 tsp Cumin (optional)

Method
 

  1. Cook quinoa according to package instructions.
  2. Pan sear steak until fully cooked (145 degrees F), then slice into strips.
  3. In a bowl, combine cooked quinoa, black beans, corn kernels, diced tomatoes, and avocado slices.
  4. Arrange grilled steak strips on top.
  5. Season with lime juice, chopped cilantro, and a sprinkle of cumin.
  6. Mix gently and enjoy!
