Ingredients
  

  • 1/4 cup Quinoa, uncooked
  • 86 gm Ground turkey, extra lean
  • 1/4 can (15oz) Black beans, canned (rinsed and drained)
  • 1/4 medium pepper(s) Red bell pepper (diced)
  • 2 tbsp Salsa, ready-to-serve
  • 1 sprig Cilantro (coriander) (to taste)
  • 1/2 slice Lime (to taste)

Method
 

  1. Cook quinoa according to package instructions.
  2. Cook ground turkey with preferred seasonings until fully cooked.
  3. In a bowl, combine cooked quinoa, cooked ground turkey, black beans, diced bell peppers, and salsa.
  4. Mix well to combine all ingredients.
  5. Garnish with chopped cilantro and a squeeze of fresh lime juice.
  6. Serve warm.
