Turkey Spinach Sandwich

Ingredients
  

  • 2 slice Whole wheat bread (or gluten-free)
  • 30 gm Avocado (mashed)
  • 6 slice Turkey breast, nitrate free, oven roasted
  • 1/4 cup Spinach (approx. 4-5 leaves)
  • 3 slice Tomato
  • 4 slice Cucumber

Method
 

  1. Cut the avocado in half, remove the pit, scoop out the avocado then mash with a fork. 
  2. Spread avocado on each slice of bread.
  3. Place the roast turkey on 1 slice of bread. Top with spinach, tomato, cucumber.
  4. Top with the other slice of bread and enjoy.

Notes

  • Serve with a bowl of soup, or pair with a yogurt cup and a piece of fruit for a heartier lunch.
  • Mix it up with other toppings, such as sauerkraut, pickles, mustard, red onion, lettuce, etc.
