Ingredients
  

  • 4 cup Lettuce, spring mix (mesclun)
  • 1 cup Cherry Tomatoes (halved)
  • 1 cucumber(s) Cucumber (sliced)
  • 1/2 small Red onion (thinly sliced)
  • 1/4 cup Carrots (shredded)
  • 2 tbsp Italian salad dressing (vinaigrette)
  • 86 gm Shrimp, cooked

Method
 

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
  2. Toss gently to combine.
  3. Top the salad with the shrimp you meal prepped earlier in the week
  4. Serve with your favorite dressing on the side.
