Ingredients
  

  • 114 gm Chicken breast, boneless, skinless
  • 2 cup Lettuce, spring mix (mesclun)
  • 1/2 cup Black beans, canned (drained and rinsed)
  • 1/2 cup Sweet corn, canned, drained (drained)
  • 1/4 medium pepper(s) Red bell pepper (diced)
  • 2 tbsp Salsa, ready-to-serve
  • 1 spray (about 1/3 second) Olive oil cooking spray

Method
 

  1. Place the chicken breast in the skillet. Spray the pan with olive oil spray and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown and cooked through.
  2. In a large salad bowl, combine mixed greens, black beans, corn, and diced red bell pepper.
  3. Top with grilled chicken breast slices.
  4. Toss gently to combine all ingredients.
